Ingredients

  • 100 g røget pancetta eller bacon
  • 50 g revet emmentaler
  • 40 g revet caciottina (medium blød, mild ost)
  • 50 g Parmigiano Reggiano BOB
  • 125 ml dobbeltfløde
  • 200 g økologisk tomatpassata
  • 400 g penne
  • peber efter smag
  • salt efter smag

Directions

Step 1

Skær pancettaen, enten i juliennestrimler eller i tern. Steg den på en pande, til den er sprød. Når baconen er gylden og sprød, tilsætter du tomatpassataen og lader den reducere under omrøring. Smag til med salt.

Step 2

Kog i mellemtiden rigeligt med saltet vand, og kog pastaen. Tilsæt fløden til saucen, rør rundt, og tilsæt derefter den afdryppede pasta. Drys med peber, gerne rigeligt, og tilsæt revet emmentaler, caciottina-ost og parmesan.
